CHEF BOBBY 

Born and raised in Houston, Texas, Chef Bobby discovered his passion for cooking at an early age, working alongside his parents in the kitchen. A proud Texas A&M University Aggie, Class of 1993, he carries strong values of tradition, discipline, and pride into everything he creates. Beyond the kitchen, he is a dedicated father to his two sons and an avid golfer, balancing family, passion, and craft.

His culinary journey took a defining turn in January 2025 when he enrolled at Auguste Escoffier School of Culinary Arts, where he met his business partner and best friend, Chef Maria. What began as a shared passion for mustard quickly evolved into a deeper purpose—one rooted in creativity, culture, and the desire to build something meaningful together.

Chef Bobby brings bold Texas character to every creation, grounded in passion, devotion, and a love for bringing people together through food.

CHEF MARIA

Born in Astoria, Queens, New York, and raised in the Dominican Republic, Chef Maria’s culinary roots are deeply tied to culture, family, and tradition. Her love for food was shaped by her paternal grandmother and her father, whose creativity in the kitchen inspired her to always bring her own twist to every dish.

A proud mother of two, Jan-Marco and Andrea-Victoria, Chef Maria considers her children her greatest inspiration. They are her whole world and her biggest taste testers—alongside her father—constantly pushing her to refine and perfect every flavor she creates.

Her journey led her to Auguste Escoffier School of Culinary Arts, where she met her business partner and best friend, Chef Bobby. Together, they built something rooted in passion and purpose. Inspired by the words of Pierre Gagnaire, “Cooking is multisensory… made for the eyes, the mouth, the nose, the ear, and the soul,” Chef Maria brings heart and heritage into every product.

Cane & Coal was born from passion, devotion, and a shared love for bold, unforgettable flavor. What started as a simple conversation between two chefs about mustard evolved into a brand that represents the fusion of two cultures, two palates, and one vision.

Chef Bobby’s Texas roots meet Chef Maria’s Dominican sazón, creating products that are both soulful and innovative. Every jar, every blend, and every recipe is crafted with intention honoring tradition while pushing flavor forward.
